Agave harvest
The crafting of Lokita mezcals begins with the careful selection of fully ripe agave hearts, rich in natural sugars. This essential first step takes place at Amantes Del Mezcal S.A. de C.V. distillery, located in the heart of Oaxaca, the birthplace of artisanal mezcal.

Grinding with a traditional tahona
The cooked agave hearts are crushed for 5 days using a traditional horse-drawn grindstone (tahona). This slow, manual process helps extract the juices while preserving the fibers and the full aromatic potential of the agave.

Natural fermentation
The agave juice and fibers are placed in pine fermentation vats, where a natural, wild-yeast fermentation takes place over approximately 4 days. This stage is key to developing the mezcal’s complexity and depth of flavor.

Double distillation in copper stills
The fermented agave mash is then double distilled in copper stills over the course of 3 days. This artisanal distillation process refines the spirit, enhancing its purity, balance, and expressive character.

Hand bottling
Each batch is hand-bottled to ensure the highest quality standards. The result is an exceptional mezcal, a true expression of craftsmanship, tradition, and dedication, honoring the legacy of Oaxaca.
